  • 12 quart Stock Pot

  • 1 32 oz. Vegetable Stock
  • lb Beef Stew Meat
  • 1 32 oz Frozen Mixed Vegetables
  • 2 large Potatoes peeled
  • 2 sticks Celery
  • 1 med Onion
  • 1 28 oz. Canned Petite Diced Tomatoes
  • cup Water
  • 3 cloves Garlic
  • 1 Bay Leaf
  • 2 tsp Basil Leaves
  • 1 tbsp Italian Seasoning
  • ½ tsp Salt
  • ½ tsp Pepper
  • 1 tbsp Parsley
  • 1 tbsp Oregano


  • First, take your stock pot and add in the vegetable stock and water. Next, you are going to want to add the meat and start heating that. After that, go on and cut up your potatoes, onion, garlic, and celery, then add them to the pot. Next, put all of the spices into the mixture except the bay leaf.
    Now, take the frozen mixed vegetables and add them to the mixture along with the tomatoes. Finally, mix the soup together and add the bay leaf to the top of the mixture put a lid on your pot and let the vegetable soup simmer for about an hour.
