For Soup:

  • 2 lbs Chicken
  • 2 (32 oz) Chicken Stock
  • 2 liters Water
  • cups sliced Carrots
  • 1 medium Onion
  • cups chopped Celery
  • 2 medium Potatoes (optional)
  • tsp Oregano
  • 2 tsp Poultry Seasoning
  • 1 tsp minced Garlic
  • ½ tsp Pepper
  • ½ tsp Salt
  • 3 cup Wide Egg Noodles

Dumplings:

  • 2 cups All Purpose Flour
  • 4 tsp Baking Powder
  • 1 large Egg (beaten)
  • 2 tbsp Butter (melted)
  • 1 cup Milk
  • 1 tsp Salt
  • ½ tsp Pepper

Instructions

  • First of all, take your  chicken and  chicken stock and place in the pot, cover and boil on high for about 30 minutes. Then turn off heat, and you can shred your chicken two ways. On one hand you can remove the chicken from pot, place on a cutting board and mash with the potato masher, or you can CAREFULLY mash the chicken right in the pot with the masher. In fact, however you feel safe. After that, return the chicken and stock to the heat, on high. Then take your  water and add to the pot.
  • Next, take your  onions, carrots,  celery, and potatoes, chop and place in pot. Note: If adding potatoes you may need to add or take out water. Now that you got your chicken, vegetables, water, and stock in the pot, it is time to add the spices. With that in mind, add your oregano,poultry seasoning, minced garlic,  pepper, and  salt, to the pot. Then place the lid on the pot and let that boil, while you make the dumplings.
  • Making the dumplings:
    First, take your bowl and add the flour, baking powder, salt, and pepper, and mix those ingredients up. Then take your egg, melted butter, andmilk, and add them to the flour mixture and stir until a sticky dough ball is formed. Consequently you may have dough that is too dry or way too sticky. While this is true, you can either add more milk if too dry or add more flour, if the dough is too sticky.
    Now take the lid off of your chicken and vegetable mixture and carefully drop small teaspoons of dough into the boiling water. And then boil dough balls for about 15 minutes. Finally take your noodlesand place them in the pot on top of the floating dumplings and carefully push noodles underneath the dumplings and continue to boil all ingredients for about 30 minutes more.
